Ingredients
- 2 tablespoon olive oil

- 1 yellow onion (medium, diced)

- 4 zucchinis (medium, spiralized into noodles)

Instructions
- Preheat oven to 400°F. In a medium baking dish, toss the cherry tomatoes with 1 tablespoon of the olive oil and season with 1/4 teaspoon of the salt and 1/8 teaspoon of the black pepper. Roast for 15-20 minutes, or until softened and slightly burst.
- While tomatoes roast, heat the remaining 1 tablespoon of olive oil and the butter in a large skillet or Dutch oven over medium heat. Add the diced yellow onion and cook until softened, about 5-7 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant. Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and the remaining 1/4 teaspoon of salt and 1/8 teaspoon of black pepper. Cook, stirring occasionally, until the sauce thickens slightly, about 5 minutes.
- Add the zucchini noodles to the skillet with the sauce and toss gently until heated through and lightly coated, about 2-3 minutes. Be careful not to overcook the zucchini, or it will become watery.
- Serve the zucchini noodles immediately, topped with the roasted cherry tomatoes.
Notes
Leftovers are best enjoyed the next day. You can prepare the spinach sauce ahead of time and gently reheat before adding the zucchini noodles.
