Instructions
- Pat chicken cubes dry with paper towels. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
- Heat a large non-stick skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Remove chicken from the skillet and set aside.
- To the same skillet, add minced garlic and 3/4 teaspoon dried oregano. Sauté for 1 minute until fragrant.
- Stir in 1 cup no-sugar-added marinara sauce and bring to a gentle simmer. Add the spiralized zucchini noodles and cook for 3-5 minutes, tossing gently, until the zucchini is just tender.
- Return the cooked chicken to the skillet. Stir well to combine and heat through for 1-2 minutes.
- Serve immediately, garnished with chopped fresh basil if desired.
