  1. Bring a large pot of salted water to a boil. Add 1 pound linguine pasta and cook according to package directions until al dente. Reserve 1/2 cup of the pasta cooking water before draining.
  2. While the pasta cooks, heat 1/2 cup olive oil in a large skillet over medium heat. Add 6 minced cloves garlic and 1/2 teaspoon red pepper flakes; cook for 1 minute until fragrant, being careful not to burn the garlic.
  3. Add 2 pounds shrimp to the skillet and cook for 2-3 minutes per side, until pink and opaque. Season with 1 1/2 teaspoons salt and 3/4 teaspoon black pepper.
  4. Pour in 1/2 cup dry white wine and 1/2 cup chicken broth. Bring to a simmer and cook for 2 minutes. Stir in the juice of 1 lemon and 1/2 cup chopped fresh parsley.
  5. Add the cooked and drained linguine to the skillet with the shrimp sauce. Toss to combine, adding a splash or two of the reserved pasta water if needed to create a saucy consistency.
  6. In a medium bowl, whisk together 2 tablespoons olive oil, 1 tablespoon red wine vinegar, 1/4 teaspoon salt, and 1/8 teaspoon black pepper to make a simple vinaigrette. Toss with 1 package mixed greens salad.
  7. Serve the Zesty Shrimp Scampi immediately, topped with 1/4 cup grated Parmesan cheese if desired, alongside the fresh mixed greens salad.

Notes

For an extra kick, add a pinch more red pepper flakes. You can also swap linguine for spaghetti or fettuccine. Make sure not to overcook the shrimp, as it can become tough quickly.
