Ingredients
- 2 cup whole grain rotini pasta (uncooked)
- 3 tablespoon vegetable oil
- 3 tablespoon lemon juice
- 2.5 teaspoon Italian seasoning
- 0.125 teaspoon red pepper flakes
- 1.5 cup cucumber (chopped)
- 0.5 cup cherry tomatoes (halved)
- 0.5 cup carrots (sliced)
- 0.25 cup red onion (minced)
- 3 tablespoon Parmesan cheese
Instructions
- Cook whole grain rotini pasta according to the package directions.
- Drain and set aside.
- In a large bowl, whisk vegetable oil, lemon juice, Italian seasoning, and red pepper flakes.
- Add cooked whole grain rotini pasta, cucumber, cherry tomatoes, carrots, red onion, and Parmesan cheese to the dressing.
- Mix well and chill for 2 hours before serving.
