  1. Heat 1 tablespoon olive oil in a large skillet or wok over medium-high heat. Add the lean ground turkey and cook, breaking it apart, until browned, about 5 minutes.
  2. Add the sliced red bell pepper, chopped bok choy, thinly sliced yellow onion, minced garlic, and grated fresh ginger to the skillet. Stir-fry for 5-7 minutes until vegetables are tender-crisp.
  3. Stir in the rice vinegar, water, and black pepper. Cook for 2 minutes more, allowing the sauce to slightly reduce.
