  1. Heat 1 tablespoon of olive oil in a large wok or skillet over medium-high heat. Add the Impossible ground meat and break it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess liquid and remove the meat from the wok, setting aside.
  2. Add the remaining 1 tablespoon of olive oil to the wok. Add the sliced yellow onion, minced garlic, and grated fresh ginger. Stir-fry for 2-3 minutes until fragrant.
  3. Add the broccoli florets to the wok. Stir-fry for 4-6 minutes until tender-crisp. While the broccoli cooks, in a small bowl, whisk together the low sodium soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using).
  4. Return the cooked Impossible meat to the wok. Pour the sauce over the meat and vegetables and toss to coat. Cook for 1-2 minutes until the sauce has slightly thickened.
  5. While the stir-fry is cooking, steam or quickly pan-fry the grated cauliflower 'rice' for about 3-5 minutes until tender. Serve the stir-fry over the cauliflower rice, garnished with fresh green onions if desired.
