Ingredients
- 1 pound Impossible ground meat
- 2 tablespoon olive oil
- 1 yellow onion (medium, sliced thin)
- 4 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 1.5 pound broccoli florets
- 0.25 cup soy sauce (low sodium)
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 0.25 teaspoon red pepper flakes
- 1 head cauliflower (large, grated into 'rice')
- 2 tablespoon fresh green onions (chopped)
Instructions
- Heat 1 tablespoon of olive oil in a large wok or skillet over medium-high heat. Add the Impossible ground meat and break it apart with a spoon. Cook until browned, about 5-7 minutes. Drain any excess liquid and remove the meat from the wok, setting aside.
- Add the remaining 1 tablespoon of olive oil to the wok. Add the sliced yellow onion, minced garlic, and grated fresh ginger. Stir-fry for 2-3 minutes until fragrant.
- Add the broccoli florets to the wok. Stir-fry for 4-6 minutes until tender-crisp. While the broccoli cooks, in a small bowl, whisk together the low sodium soy sauce, rice vinegar, sesame oil, and red pepper flakes (if using).
- Return the cooked Impossible meat to the wok. Pour the sauce over the meat and vegetables and toss to coat. Cook for 1-2 minutes until the sauce has slightly thickened.
- While the stir-fry is cooking, steam or quickly pan-fry the grated cauliflower 'rice' for about 3-5 minutes until tender. Serve the stir-fry over the cauliflower rice, garnished with fresh green onions if desired.
