Wok-Seared Garlic Butter Shrimp with Coconut Jasmine Rice and Steamed Snap Peas

  1. Combine jasmine rice, canned light coconut milk, water, and 1/2 teaspoon of salt in a medium saucepan. Bring to a simmer over high heat, cover with a tight-fitting lid, reduce heat to low, and cook for 12 minutes until liquid is absorbed. Let stand covered off heat for 3 minutes.
  2. Heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter in a large skillet or wok over medium-high heat. Add the trimmed sugar snap peas and 1/4 teaspoon of salt, stir-frying for 3 minutes until crisp-tender and bright green. Transfer to a bowl.
  3. Add the remaining 2 tablespoons of unsalted butter and minced garlic to the skillet. Cook for 30 seconds until fragrant.
  4. Add the large shrimp, crushed red pepper flakes, and remaining 1/4 teaspoon of salt. Sauté for 3 to 4 minutes, tossing continuously until the shrimp are opaque, pink, and firm throughout.
  5. Fluff coconut rice with a fork and serve warm topped with the garlic butter shrimp and snap peas, accompanied by lime wedges.

Notes

Be careful not to overcook the shrimp; as soon as they turn pink and form a gentle C-shape, remove from heat.
