  1. Start by preparing the white rice according to package instructions.
  2. In a medium bowl, combine the chicken breast pieces with 1 tablespoon soy sauce and cornstarch. Toss to coat and set aside.
  3. Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. Add the broccoli florets and stir-fry for 3-4 minutes until bright green and tender-crisp. Remove broccoli from the wok and set aside.
  4. Add the remaining 1 tablespoon vegetable oil to the wok. Add the marinated chicken and stir-fry for 4-5 minutes, until cooked through and lightly browned. Remove chicken from the wok.
  5. Add the minced garlic and grated fresh ginger to the hot wok, stir-frying for 30 seconds until fragrant.
  6. Pour in the chicken broth and 1 tablespoon soy sauce, scraping any browned bits from the bottom of the wok. Bring to a simmer.
  7. Return the cooked chicken and broccoli to the wok. Stir in the sesame oil and red pepper flakes (if using). Toss everything to coat in the sauce.
  8. Serve immediately over the hot white rice.

Notes

For extra protein, add a handful of cashews or peanuts to the stir-fry during the last minute of cooking.
