Ingredients
- 1 cup white rice (uncooked)
- 1 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 2 tablespoon soy sauce
- 1 teaspoon cornstarch
- 2 tablespoon vegetable oil
- 4 cup broccoli florets
- 2 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 0.5 cup chicken broth
- 1 teaspoon sesame oil
- 1 pinch red pepper flakes
Instructions
- Start by preparing the white rice according to package instructions.
- In a medium bowl, combine the chicken breast pieces with 1 tablespoon soy sauce and cornstarch. Toss to coat and set aside.
- Heat 1 tablespoon vegetable oil in a large wok or skillet over high heat. Add the broccoli florets and stir-fry for 3-4 minutes until bright green and tender-crisp. Remove broccoli from the wok and set aside.
- Add the remaining 1 tablespoon vegetable oil to the wok. Add the marinated chicken and stir-fry for 4-5 minutes, until cooked through and lightly browned. Remove chicken from the wok.
- Add the minced garlic and grated fresh ginger to the hot wok, stir-frying for 30 seconds until fragrant.
- Pour in the chicken broth and 1 tablespoon soy sauce, scraping any browned bits from the bottom of the wok. Bring to a simmer.
- Return the cooked chicken and broccoli to the wok. Stir in the sesame oil and red pepper flakes (if using). Toss everything to coat in the sauce.
- Serve immediately over the hot white rice.
Notes
For extra protein, add a handful of cashews or peanuts to the stir-fry during the last minute of cooking.
