Ingredients
- 8 ounce pork tenderloin (thinly sliced)
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon fresh ginger (freshly grated)
- 2 clove garlic (minced)
- 1 tablespoon cornstarch
- 4 ounce egg noodles
- 1 tablespoon vegetable oil
- 1 broccoli (medium head, cut into florets)
- 1 carrot (medium, julienned)
- 0.25 cup water
- 1 teaspoon sesame seeds
Instructions
- In a medium bowl, combine the pork tenderloin, soy sauce, rice vinegar, sesame oil, ginger, minced garlic, and cornstarch. Toss to coat and set aside to marinate for at least 10 minutes.
- Cook the egg noodles according to package directions. Drain and rinse with cold water to prevent sticking. Set aside.
- Heat vegetable oil in a large wok or skillet over high heat until shimmering. Add the marinated pork and stir-fry for 3-4 minutes, until browned and cooked through. Remove pork from the wok and set aside.
- Add the broccoli florets and julienned carrot to the wok. Add 1/4 cup water, cover, and steam for 2-3 minutes until vegetables are tender-crisp.
- Return the pork to the wok with the vegetables. Add the cooked egg noodles and toss everything together for 1-2 minutes until heated through. Garnish with sesame seeds, if desired, and serve immediately.
Notes
Feel free to add other quick-cooking vegetables like snap peas or bell peppers.
