  1. Cook jasmine rice according to package directions. This will take about 15 minutes, allowing you to prep other ingredients simultaneously.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, cornstarch, and chicken broth to create the stir-fry sauce.
  3. Heat 1 tablespoon olive oil in a large wok or skillet over medium-high heat. Add the thinly sliced pork tenderloin and cook for 3-4 minutes, until browned, stirring occasionally. Remove pork from skillet and set aside.
  4. Add minced garlic, grated fresh ginger, and broccoli florets to the same skillet. Stir-fry for 3-5 minutes, until broccoli is tender-crisp.
  5. Return the cooked pork to the skillet. Give the stir-fry sauce a quick whisk, then pour it over the pork and vegetables. Cook, stirring constantly, for 1-2 minutes until the sauce thickens.
  6. Season with 1/2 teaspoon black pepper.
  7. Serve the wok-fried pork and ginger broccoli immediately over the cooked jasmine rice.
