Ingredients
- 2 tablespoon olive oil (or cooking oil of choice)
- 1 onion (medium, finely chopped)
- 1 can green chilies (4 ounces, drained)
- 2 can Great Northern Beans (15.5 ounces each, low-sodium)
- 1 can chicken broth (14.5 ounces, low-sodium)
- 2 teaspoon garlic powder
- 0.5 teaspoon black pepper
- 2 teaspoon ground cumin
- 1.5 cup chicken (cooked, cubed)
- 0.5 cup mozzarella cheese (shredded)
- 1 parsley (fresh)
Instructions
- Heat olive oil in a large saucepan.
- Add onion and cook until tender.
- Add green chilies, beans (do not drain), chicken broth, garlic powder, black pepper, ground cumin, and chicken.
- Bring to a boil.
- Reduce heat and simmer for 10 minutes or until desired thickness.
- Serve hot, topped with mozzarella cheese.
- Add parsley if desired.
Notes
To reduce sodium content of soups, drain and rinse canned beans, use low-sodium broth, and add your own spices instead of using a seasoning packet.
