- 1 pound Italian sausage (casings removed)
- 1 yellow onion (medium, chopped)
- 2 carrots (peeled and diced)
- 2 celery stalks (diced)
- 3 clove garlic (minced)
- 1 can crushed tomatoes
- 4 cup chicken broth
- 2 can cannellini beans (rinsed and drained)
- 1 teaspoon dried oregano
- 0.5 teaspoon dried thyme
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 cup fresh parsley (chopped, for garnish)
- 6 slice crusty bread
Instructions
- Heat 1 tablespoon olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add Italian sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Drain excess fat.
- Add chopped yellow onion, diced carrots, and diced celery stalks to the pot. Sauté for 5-7 minutes until vegetables begin to soften.
- Stir in minced garlic, dried oregano, dried thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper. Cook for 1 minute until fragrant.
- Pour in crushed tomatoes and chicken broth. Bring to a simmer, then add rinsed and drained cannellini beans. Reduce heat to low, cover, and simmer for 15 minutes, allowing flavors to meld.
- Taste and adjust seasonings as needed. Ladle the hearty stew into bowls and garnish with chopped fresh parsley, if desired. Serve hot with crusty bread.
Notes
