  1. Heat 1 tablespoon olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add Italian sausage, breaking it up with a spoon, and cook until browned, about 5-7 minutes. Drain excess fat.
  2. Add chopped yellow onion, diced carrots, and diced celery stalks to the pot. Sauté for 5-7 minutes until vegetables begin to soften.
  3. Stir in minced garlic, dried oregano, dried thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper. Cook for 1 minute until fragrant.
  4. Pour in crushed tomatoes and chicken broth. Bring to a simmer, then add rinsed and drained cannellini beans. Reduce heat to low, cover, and simmer for 15 minutes, allowing flavors to meld.
  5. Taste and adjust seasonings as needed. Ladle the hearty stew into bowls and garnish with chopped fresh parsley, if desired. Serve hot with crusty bread.
