White Bean and Turkey Chili

  1. Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add 3/4 pound ground turkey and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  2. Add 1/2 diced yellow onion and 1 diced green bell pepper to the pot. Cook until softened, about 5-7 minutes.
  3. Stir in 2 cloves minced garlic, 1 1/2 tablespoons chili powder, 1 teaspoon ground cumin, and 1/2 teaspoon dried oregano. Cook for 1 minute until fragrant.
  4. Pour in 1 can undrained diced tomatoes, 1 can rinsed and drained great northern beans, and 1 cup chicken broth. Bring the chili to a simmer.
  5. Reduce heat to low, cover, and let the chili simmer for at least 30 minutes, stirring occasionally, to allow flavors to meld. Season with 3/4 teaspoon kosher salt and 1/4 teaspoon black pepper.
  6. Serve the white bean and turkey chili hot with 2 pieces cornbread. Garnish with 1/4 cup shredded cheddar cheese and 2 tablespoons chopped green onions, if desired.

Notes

For a bit of heat, add a pinch of red pepper flakes with the other spices. This chili freezes well for future meals.
