West African Spiced Chicken

  1. In a medium bowl, toss 1 1/4 pounds chicken breast pieces with 1 tablespoon olive oil, 1 yellow onion, 2 minced garlic cloves, 1 tablespoon ground ginger, 1 tablespoon smoked paprika, 1 teaspoon ground coriander, and optional 1/2 teaspoon cayenne pepper. Season with salt and black pepper.
  2. Heat a large non-stick skillet over medium-high heat. Add the seasoned chicken mixture and cook for 8-10 minutes, stirring occasionally, until chicken is cooked through and lightly browned.
  3. While the chicken cooks, microwave 2 pounds frozen sweet potato cubes according to package directions, typically 5-7 minutes, until very tender. Drain any liquid.
  4. Mash the cooked sweet potatoes in a bowl with 1/4 cup chicken broth and 1/4 cup unsweetened almond milk until smooth. Season with salt and pepper to taste.
  5. Serve the West African Spiced Chicken with the mashed sweet potatoes and a side of 1 bag coleslaw mix.

Notes

Pre-chopped sweet potatoes and bagged coleslaw make this dish incredibly fast. Look for a soy-free dressing if you wish to dress the coleslaw.
