Ingredients
- 1.25 pound chicken breast (boneless, skinless, cut into 1-inch pieces)
- 1 tablespoon olive oil
- 1 yellow onion (finely diced)
- 2 clove garlic (minced)

- 1 tablespoon smoked paprika
- 1 teaspoon ground coriander
- 0.5 teaspoon cayenne pepper
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 2 pound frozen sweet potato cubes
- 0.25 cup chicken broth
- 0.25 cup unsweetened almond milk
- 14 ounce coleslaw mix
Instructions
- In a medium bowl, toss 1 1/4 pounds chicken breast pieces with 1 tablespoon olive oil, 1 yellow onion, 2 minced garlic cloves, 1 tablespoon ground ginger, 1 tablespoon smoked paprika, 1 teaspoon ground coriander, and optional 1/2 teaspoon cayenne pepper. Season with salt and black pepper.
- Heat a large non-stick skillet over medium-high heat. Add the seasoned chicken mixture and cook for 8-10 minutes, stirring occasionally, until chicken is cooked through and lightly browned.
- While the chicken cooks, microwave 2 pounds frozen sweet potato cubes according to package directions, typically 5-7 minutes, until very tender. Drain any liquid.
- Mash the cooked sweet potatoes in a bowl with 1/4 cup chicken broth and 1/4 cup unsweetened almond milk until smooth. Season with salt and pepper to taste.
- Serve the West African Spiced Chicken with the mashed sweet potatoes and a side of 1 bag coleslaw mix.
Notes
Pre-chopped sweet potatoes and bagged coleslaw make this dish incredibly fast. Look for a soy-free dressing if you wish to dress the coleslaw.
