West African Peanut Stew

  1. Heat 1/2 tablespoon olive oil in a medium saucepan over medium heat. Add chicken thigh pieces and cook until browned, about 5 minutes. Remove chicken and set aside.
  2. Add diced yellow onion to the saucepan and cook until softened, about 5 minutes. Stir in minced garlic, grated fresh ginger, ground cumin, ground coriander, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  3. Whisk in chicken broth and creamy peanut butter until smooth. Add diced sweet potato. Bring to a simmer, then reduce heat to low, cover, and cook for 15 minutes, or until sweet potatoes are tender.
  4. Return chicken to the pot. Stir in fresh spinach until wilted, about 2-3 minutes. Season with salt and black pepper.
  5. While the stew simmers, cook the uncooked brown rice according to package directions. For 1 serving, combine 1/4 cup brown rice with 1/2 cup water, bring to a boil, reduce heat, cover, and simmer for 30-40 minutes.
  6. Serve West African Peanut Stew over cooked brown rice.

Notes

For a vegetarian version, omit chicken and add an extra cup of sweet potato or chickpeas. Adjust spices to your preference for a bolder flavor.
