Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it up with a spoon, until browned, about 5 minutes.
  2. Drain any excess grease. Stir in the chili powder, cumin, onion powder, garlic powder, and kosher salt until the meat is evenly coated.
  3. Pour in the water and bring to a simmer. Reduce heat to low and cook until the liquid reduces slightly, about 5 minutes.
  4. While the meat cooks, prepare the microwave white rice according to package directions.
  5. Stir the black beans into the ground turkey mixture and heat through, about 2 minutes.
  6. Remove the turkey mixture from the heat and stir in the fresh lime juice and fresh cilantro.
  7. Assemble the bowls by spooning the rice into serving bowls, topping with the turkey and black bean mixture. Garnish with the optional Monterey Jack cheese, salsa, and tortilla chips.

Notes

You can prep the seasonings ahead of time in a small container to make assembly even quicker on busy weeknights.
