- 1 tablespoon olive oil
- 1 pound ground beef (lean)
- 1 yellow onion (chopped)
- 1 red bell pepper (chopped)
- 2 clove garlic (minced)
- 1 can diced tomatoes (undrained)
- 1 can kidney beans (rinsed and drained)
- 1 can black beans (rinsed and drained)
- 0.75 cup water
- 2 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon kosher salt
- 0.25 teaspoon black pepper (freshly ground)
- 1 cornbread mix (prepared according to package directions)
- 0.5 cup cheddar cheese (shredded, for topping)
- 0.25 cup sour cream (for topping)
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add ground beef and cook, breaking it apart, until browned, about 5-7 minutes. Drain excess fat.
- Add chopped yellow onion and chopped red bell pepper to the pot. Cook for 3-4 minutes until softened. Stir in minced garlic and cook for another minute until fragrant.
- Stir in diced tomatoes, rinsed kidney beans, rinsed black beans, 3/4 cup water, chili powder, ground cumin, kosher salt, and black pepper. Bring to a simmer.
- Reduce heat to low, cover, and simmer for at least 10 minutes to allow flavors to meld. While chili simmers, prepare cornbread mix according to package directions.
