Warm Spiced Beef and Sweet Potato Hash

  1. Heat 1/2 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat and set the beef aside.
  2. In the same skillet, add the diced yellow onion and diced sweet potato. Cook for 5-7 minutes, stirring occasionally, until the sweet potato starts to soften and the onion is translucent.
  3. Return the cooked ground beef to the skillet. Stir in the ground cumin, smoked paprika, ground coriander, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Cook for 1 minute until fragrant.
  4. Pour in 1/2 cup of beef broth and bring to a simmer. Reduce heat to medium-low, cover, and cook for 5-7 minutes, or until the sweet potatoes are tender.
  5. Remove from heat. Garnish with chopped fresh cilantro and a squeeze of fresh lime juice before serving.

Notes

For quicker cooking of sweet potatoes, you can microwave the diced cubes for 2-3 minutes before adding to the pan.
