Ingredients
- 0.5 tablespoon olive oil
- 0.5 pound ground beef (lean)
- 1 yellow onion (medium, diced)
- 1 sweet potato (large, peeled and diced into 1/2-inch cubes)
- 0.5 cup beef broth
- 1 teaspoon ground cumin
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon ground coriander
- 0.25 teaspoon salt
- 0.13 teaspoon black pepper
- 2 tablespoon fresh cilantro (chopped, for garnish)
- 0.5 lime (half for juice, for garnish)
Instructions
- Heat 1/2 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until browned. Drain any excess fat and set the beef aside.
- In the same skillet, add the diced yellow onion and diced sweet potato. Cook for 5-7 minutes, stirring occasionally, until the sweet potato starts to soften and the onion is translucent.
- Return the cooked ground beef to the skillet. Stir in the ground cumin, smoked paprika, ground coriander, 1/4 teaspoon of salt, and 1/8 teaspoon of black pepper. Cook for 1 minute until fragrant.
- Pour in 1/2 cup of beef broth and bring to a simmer. Reduce heat to medium-low, cover, and cook for 5-7 minutes, or until the sweet potatoes are tender.
- Remove from heat. Garnish with chopped fresh cilantro and a squeeze of fresh lime juice before serving.
Notes
For quicker cooking of sweet potatoes, you can microwave the diced cubes for 2-3 minutes before adding to the pan.
