Instructions
- Cook the 1/2 cup jasmine rice according to package directions. While rice cooks, season the 1/2 pound chicken breast pieces with 1/4 teaspoon garlic powder, salt, and black pepper.
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and lightly browned. Remove chicken from skillet and set aside.
- In a small bowl, whisk together the 1/2 cup canned crushed pineapple (with its juice), 1 tablespoon soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon cornstarch until smooth. Pour into the same skillet and bring to a simmer over medium heat, stirring constantly, until the glaze thickens, about 2-3 minutes.
- Return the cooked chicken to the skillet, tossing to coat evenly in the pineapple glaze.
- For the salad, combine the 1/2 cup sliced cucumber, 1 teaspoon grated fresh ginger, and 1 teaspoon lime juice in a small bowl. Toss gently.
- Serve the warm pineapple-glazed chicken bites over the jasmine rice, with the cucumber-ginger salad on the side. Garnish with 1 tablespoon chopped fresh cilantro if desired.
Notes
For extra sweetness and depth, a teaspoon of brown sugar can be added to the pineapple glaze.
