Ingredients
- 1 tablespoon vegetable oil
- 1 pound ground turkey
- 0.5 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 tablespoon fresh ginger (grated)
- 1 teaspoon ground cumin
- 0.5 teaspoon ground turmeric
- 0.25 teaspoon salt
- 0.25 teaspoon black pepper
- 15 ounce chickpeas (rinsed and drained)
- 1 cup white rice (uncooked)
- 2 cup chicken broth
- 2 tablespoon fresh cilantro (chopped)
Instructions
- Heat 1 tablespoon vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it apart, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set aside.
- Add the chopped yellow onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic and grated fresh ginger and cook for 1 minute more until fragrant.
- Stir in the ground cumin, ground turmeric, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute, stirring constantly, until aromatic.
- Return the cooked turkey to the skillet. Stir in the rinsed and drained chickpeas, white rice, and chicken broth. Bring to a simmer.
- Reduce heat to low, cover the skillet, and cook for 12-15 minutes, or until all the liquid is absorbed and the rice is tender. If necessary, cook for a few more minutes until the rice is fully cooked.
- Fluff the pilaf with a fork. Serve hot, garnished with fresh cilantro if desired.
Notes
Adjust spices to your taste. For added vegetable content, you can stir in 1 cup of frozen mixed vegetables (like carrots and peas) along with the chickpeas.
