  1. Heat 1 tablespoon vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the ground turkey and cook, breaking it apart, until browned and cooked through, about 5-7 minutes. Drain any excess fat and set aside.
  2. Add the chopped yellow onion to the skillet and cook until softened, about 3-4 minutes. Stir in the minced garlic and grated fresh ginger and cook for 1 minute more until fragrant.
  3. Stir in the ground cumin, ground turmeric, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute, stirring constantly, until aromatic.
  4. Return the cooked turkey to the skillet. Stir in the rinsed and drained chickpeas, white rice, and chicken broth. Bring to a simmer.
  5. Reduce heat to low, cover the skillet, and cook for 12-15 minutes, or until all the liquid is absorbed and the rice is tender. If necessary, cook for a few more minutes until the rice is fully cooked.
  6. Fluff the pilaf with a fork. Serve hot, garnished with fresh cilantro if desired.

Notes

Adjust spices to your taste. For added vegetable content, you can stir in 1 cup of frozen mixed vegetables (like carrots and peas) along with the chickpeas.
