Instructions
- Cook low-carb pasta according to package directions until al dente. Drain and set aside.
- While pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and diced yellow onion; cook for 3-4 minutes until softened and fragrant.
- Add rinsed cannellini beans, low-sodium diced tomatoes, low-sodium vegetable broth, dried oregano, dried basil, and red pepper flakes (if using) to the skillet. Bring to a simmer and cook for 5-7 minutes, allowing flavors to meld. Lightly mash some beans for a creamier sauce.
- Stir in the packed fresh spinach and cook until wilted, about 2-3 minutes. Season with salt and black pepper to taste.
- Add the cooked low-carb pasta to the skillet with the bean and spinach mixture. Toss to combine and heat through.
- Serve immediately, garnished with fresh basil if desired.
