Ingredients
- 2 package extra firm tofu (drained, pressed, cubed)
- 2 can cannellini beans (rinsed and drained)
- 1 can crushed tomatoes
- 5 ounce fresh baby spinach
- 4 clove garlic (minced)
- 2 tablespoon olive oil (extra virgin)
- 1 teaspoon dried oregano
- 0.25 cup nutritional yeast
- 5 slice gluten-free bread (toasted)
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add cubed extra-firm tofu and cook for 6 minutes until lightly browned.
- Add minced garlic and dried oregano; sauté for 1 minute until fragrant.
- Pour in crushed tomatoes, cannellini beans, nutritional yeast, salt, and black pepper. Stir well and simmer for 6 minutes.
- Fold in fresh baby spinach and cook for 2 minutes until wilted.
- Serve warm skillet contents alongside toasted gluten-free bread slices.
Notes
Pressing the tofu removes moisture, allowing it to brown nicely in the skillet.
