- 1.5 pound chicken breast (boneless, skinless, cut into 1-inch pieces)

- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 can diced tomatoes (undrained)

- 0.75 cup chicken broth
- 1 teaspoon dried basil
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.25 teaspoon crushed red pepper flakes
- 5 ounce fresh spinach
- 6 slice crusty bread (for serving)
Instructions
- Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breast pieces and cook, stirring occasionally, until lightly browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add 1 chopped yellow onion to the skillet and cook until softened, about 3-4 minutes. Stir in 2 minced garlic cloves and cook for 1 more minute until fragrant.
- Return the chicken to the skillet. Stir in 1 can undrained diced tomatoes, 1 can rinsed and drained cannellini beans, 3/4 cup chicken broth, 1 teaspoon dried basil, 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon crushed red pepper flakes (if using). Bring the mixture to a simmer.
- Once simmering, stir in the fresh spinach a handful at a time, allowing it to wilt before adding more. Continue cooking until the spinach is fully wilted and the sauce has thickened slightly, about 3-5 minutes.
- Serve the Tuscan white bean and chicken skillet warm with crusty bread for dipping.
Notes
This one-skillet meal is easy to customize. Feel free to add other quick-cooking vegetables like chopped bell peppers or zucchini during the last few minutes of cooking.
