Tuscan Turkey Bolognese with Polenta

  1. Heat olive oil in a large deep skillet over medium heat. Add diced yellow onion, carrots, and celery, cooking for 5 minutes until softened.
  2. Add minced garlic and ground turkey to the skillet, breaking up the meat with a wooden spoon and cooking for 6 to 7 minutes until no longer pink and reaching an internal temperature of 165°F.
  3. Stir in crushed tomatoes, 1/4 teaspoon of the salt, and black pepper. Lower the heat to medium-low, cover partially, and simmer gently for 25 minutes until rich and thickened, stirring occasionally.
  4. While the sauce simmers, bring 3 cups of water and remaining 1/4 teaspoon salt to a boil in a medium saucepan. Slowly whisk in the polenta to prevent clumping.
  5. Reduce heat to low, cover, and cook polenta for 20 minutes, stirring frequently, until smooth and thick.
  6. Stir fresh basil into the simmering meat sauce and serve warm ladled over portions of soft polenta.
