Tuscan Turkey and White Bean Stew

  1. Heat 1 tablespoon olive oil in a large Dutch oven over medium-high heat. Add 1 pound ground turkey, breaking it up with a spoon, and cook for 6 minutes until browned.
  2. Add 1 diced yellow onion and 2 diced carrots to the pot; cook for 4 minutes until the onions are translucent.
  3. Stir in 4 minced garlic cloves, 1 teaspoon crushed dried rosemary, 1 teaspoon dried thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper, cooking for 1 minute until fragrant.
  4. Pour in 6 cups chicken broth, 1 can diced tomatoes, and 2 cans rinsed cannellini beans. Bring to a boil, then reduce heat to low and simmer uncovered for 10 minutes.
  5. Add 4 cups chopped kale and simmer for an additional 4 minutes until kale is tender.
  6. Stir in 1 tablespoon red wine vinegar and remove from heat before serving.

Notes

Kale holds its texture exceptionally well over several days in the fridge without becoming mushy.
