Ingredients
- 0.5 pound Italian pork sausage (bulk or casings removed)
- 2 clove garlic (minced)
- 0.5 teaspoon dried oregano
- 0.25 teaspoon red pepper flakes
- 1 can canned cannellini beans (15 oz can, rinsed and drained)
- 2 cup chicken broth
- 2 cup baby spinach (packed)
- 1 teaspoon red wine vinegar
Instructions
- Heat a medium saucepan over medium heat. Add 1/2 pound Italian pork sausage and cook for 5 minutes, breaking it into bite-sized pieces with a spoon until browned.
- Add minced garlic, 1/2 teaspoon dried oregano, and 1/4 teaspoon red pepper flakes; cook for 1 minute until aromatic.
- Pour in 2 cups chicken broth and 1 can drained cannellini beans. Bring to a gentle simmer.
- Simmer uncovered for 8 minutes, lightly mashing a spoonful of beans against the side of the pot to thicken the stew.
- Stir in 2 cups baby spinach and 1 teaspoon red wine vinegar; cook for 2 minutes until spinach is fully wilted, then serve.
Notes
Mashing a small portion of the white beans creates a rich, rustic broth texture without using flour or heavy cream.
