Instructions

  1. Preheat your oven to 425 degrees F and line a large baking sheet with parchment paper.
  2. In a small bowl, blend 1 teaspoon dried oregano, 1 teaspoon crushed dried rosemary, 1 teaspoon garlic powder, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper.
  3. Place 1 1/2 pounds boneless skinless chicken thighs, sliced zucchini, and chopped yellow bell pepper onto the baking sheet. Drizzle with 3 tablespoons olive oil and sprinkle with the mixed herb seasoning, tossing well to coat evenly.
  4. Roast for 22 to 25 minutes until the chicken reaches an internal temperature of 165 degrees F and the vegetables are tender with lightly browned edges.
  5. While roasting, bring 3 cups of water to a boil in a medium saucepan over high heat. Gradually whisk in 1 cup quick-cooking polenta.
  6. Reduce heat to low and cook the polenta, stirring constantly for 5 minutes until thick and smooth. Stir in 2 tablespoons butter and 1/2 cup grated Parmesan cheese until fully melted.
  7. Divide the warm polenta among four plates and top with roasted chicken thighs, zucchini, and peppers along with pan drippings.

Notes

Chicken thighs stay tender during roasting; reheat polenta with a splash of water to restore its creamy texture.
