Tuscan Garlic Beef and Green Beans

  1. Season the sliced top sirloin steak with 1/2 teaspoon of the salt, black pepper, and dried oregano.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef strips in a single layer and sear for 3 to 4 minutes until deeply browned on the outside and reaching an internal temperature of 145°F. Transfer the beef to a plate and set aside.
  3. In the same skillet, add the remaining 1 tablespoon of olive oil over medium heat. Add the green beans, remaining 1/2 teaspoon salt, and 2 tablespoons of water. Cover and steam for 4 to 5 minutes until crisp-tender.
  4. Uncover the skillet, stir in the minced garlic and sliced sun-dried tomatoes, and sauté for 1 minute until fragrant.
  5. Return the seared beef and any resting juices back to the skillet, tossing everything together for 1 minute to warm through. Remove from heat and top with grated Parmesan cheese before serving.

Notes

Slicing the steak across the grain ensures maximum tenderness during high-heat searing.
