  1. Heat the olive oil in a large skillet over medium-high heat. Season the chicken breast pieces with kosher salt and black pepper. Add chicken to the hot skillet and cook for 3-4 minutes per side, until browned and cooked through. Remove chicken from the skillet and set aside.
  2. Add the sliced red onion to the same skillet and sauté for 3-4 minutes until softened. Stir in the minced garlic, chopped sun-dried tomatoes, dried oregano, and red pepper flakes (if using) and cook for 1 minute until fragrant.
  3. Add the rinsed and drained cannellini beans and chopped kale to the skillet. Pour in the vegetable broth. Bring to a simmer and cook for 2-3 minutes, stirring, until the kale has wilted.
  4. Return the cooked chicken to the skillet, stirring to combine and heat through. Serve immediately with whole wheat crusty bread for dipping.

Notes
