Tuscan Braised Chicken with Roasted Garlic Cauliflower

Instructions

  1. Preheat oven to 425°F. Toss cauliflower florets with 1 tbsp olive oil, half of the minced garlic, 1/4 tsp salt, and black pepper on a baking sheet. Roast for 25 minutes until tender and caramelized.
  2. Heat remaining 1 tbsp olive oil in a large deep skillet or Dutch oven over medium-high heat. Add chicken breast pieces and sear for 5 minutes until lightly browned. Remove chicken and set aside.
  3. In the same skillet, add diced yellow onion and remaining minced garlic. Sauté for 3 minutes until softened.
  4. Stir in diced tomatoes, low-sodium chicken broth, dried oregano, dried basil, and remaining 1/4 tsp salt. Bring sauce to a simmer.
  5. Return seared chicken to skillet, reduce heat to low, cover, and simmer for 15 minutes until chicken is cooked through.
  6. Stir in fresh baby spinach until wilted. Serve braised chicken and sauce alongside roasted garlic cauliflower.
