Ingredients
- 1.5 pound lean ground beef (93% lean)
- 12 ounce chickpea penne pasta (uncooked)
- 1 tablespoon olive oil (extra virgin)
- 1 yellow onion (medium, finely diced)
- 2 carrots (medium, finely diced)
- 4 clove garlic (minced)
- 1 can crushed tomatoes (28 oz can)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 0.75 teaspoon salt
- 0.5 teaspoon black pepper (freshly ground)
Instructions
- Bring a large pot of salted water to a rolling boil over high heat.
- In a large Dutch oven or deep skillet, heat olive oil over medium heat for 1 minute.
- Add diced yellow onion and carrots to the skillet; sauté for 5 minutes until softened.
- Add lean ground beef, 1/2 teaspoon of the salt, and 1/4 teaspoon of the black pepper. Cook for 6 to 7 minutes, breaking up the meat with a wooden spoon, until browned and cooked through to 160 degrees F.
- Stir in minced garlic, dried oregano, and dried basil; cook for 1 minute until fragrant.
- Pour in crushed tomatoes, along with remaining 1/4 teaspoon salt and 1/4 teaspoon black pepper. Lower heat to medium-low and simmer gently for 12 minutes to develop flavors.
- Meanwhile, cook chickpea penne pasta in the boiling water for 8 minutes until al dente, then drain well.
- Fold drained pasta directly into the simmering beef bolognese, toss gently to coat, and serve hot.
Notes
Chickpea pasta holds up nicely for reheating; store leftover portions in airtight containers for up to 4 days.
