- 1 yellow onion (medium, diced)

- 1 pound baby red potatoes (diced into 1/2-inch pieces)

- 1 can diced tomatoes (14.5 oz can with Italian herbs, undrained)
- 1 tablespoon dried Italian seasoning
- 1 teaspoon kosher salt
- 0.5 teaspoon black pepper (freshly ground)
- 0.25 cup Parmesan cheese (finely grated, for serving)
Instructions
- Place diced baby red potatoes in a microwave-safe bowl with 2 tablespoons of water, cover with a damp paper towel, and microwave on high for 4 minutes until just fork-tender; drain any excess water.
- Heat olive oil in a large 12-inch nonstick skillet over medium-high heat. Add yellow onion and lean ground beef, breaking it up with a wooden spoon, and cook for 5 to 6 minutes until the beef reaches an internal temperature of 160°F and is no longer pink.
- Add minced garlic, green beans, dried Italian seasoning, black pepper, and 3/4 teaspoon of the kosher salt to the skillet, stirring constantly for 2 minutes until fragrant.
- Pour in the undrained diced tomatoes and the par-cooked baby red potatoes, seasoning with the remaining 1/4 teaspoon kosher salt. Stir well, cover the skillet, reduce heat to medium-low, and simmer for 5 minutes until the green beans are crisp-tender and the sauce is slightly reduced.
- Remove from heat, adjust seasoning if desired, and sprinkle with grated Parmesan cheese before serving.
