Ingredients
- 8 ounce ground beef (96% lean)
- 4 cup broccoli florets (cut into small pieces)
- 1 can artichoke hearts (drained and chopped)
- 1 can crushed tomatoes (no-salt-added)
- 1 tablespoon olive oil (extra virgin)
- 1 teaspoon Italian seasoning
- 2 clove garlic (minced)
- 0.25 teaspoon salt
- 0.25 teaspoon red pepper flakes
- 2 tablespoon Parmesan cheese (grated)
Instructions
- Heat olive oil in an oven-safe 12-inch skillet over medium-high heat. Add the lean ground beef and minced garlic, breaking up the meat with a wooden spoon for 6 to 7 minutes until thoroughly browned and reaching 160°F internal temperature.
- Stir in Italian seasoning, crushed red pepper flakes, salt, crushed tomatoes, chopped artichoke hearts, and broccoli florets. Reduce heat to medium, cover, and simmer for 8 minutes until broccoli is tender-crisp.
- Preheat oven broiler to HIGH. Uncover the skillet, sprinkle Parmesan cheese evenly across the top, and broil for 2 to 3 minutes until cheese is golden and bubbling.
- Remove carefully from the oven, let rest for 3 minutes, and divide evenly onto serving plates.
Notes
Store the second portion in an airtight container; it reheats cleanly in the microwave or toaster oven.
