- 2 pound chicken breast (boneless, skinless, cut into bite-sized pieces)
- 1 tablespoon olive oil (extra virgin)
- 1 yellow onion (medium, diced)
- 4 clove garlic (minced)
- 1 tablespoon fresh ginger (minced)
- 1.5 pound green beans (trimmed, halved)
- 1 can canned diced tomatoes (undrained)
- 1.5 teaspoon ground turmeric
- 1.5 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon garam masala
- 1 teaspoon salt
- 0.5 teaspoon black pepper (ground)
- 0.25 cup fresh cilantro (chopped)
Instructions
- Season the diced chicken breast evenly with half of the salt and black pepper.
- Heat olive oil in a wide, deep skillet over medium-high heat. Add the chicken breast pieces and sear for 5 to 6 minutes, stirring occasionally, until browned on all sides and cooked through to an internal temperature of 165°F. Transfer chicken to a plate.
- In the same skillet, reduce heat to medium and add the diced yellow onion, cooking for 3 minutes. Stir in the minced garlic, fresh ginger, ground turmeric, ground cumin, ground coriander, and garam masala, stirring for 1 minute until fragrant.
- Pour in the canned diced tomatoes and remaining salt. Add the trimmed green beans, bring to a simmer, then cover and cook for 8 minutes until green beans are tender-crisp.
- Return the cooked chicken and any accumulated resting juices to the skillet, tossing everything together for 2 minutes to heat through. Garnish with chopped fresh cilantro and serve warm.
