Turmeric-Spiced Chicken Skillet

  1. Season the diced chicken breast evenly with half of the salt and black pepper.
  2. Heat olive oil in a wide, deep skillet over medium-high heat. Add the chicken breast pieces and sear for 5 to 6 minutes, stirring occasionally, until browned on all sides and cooked through to an internal temperature of 165°F. Transfer chicken to a plate.
  3. In the same skillet, reduce heat to medium and add the diced yellow onion, cooking for 3 minutes. Stir in the minced garlic, fresh ginger, ground turmeric, ground cumin, ground coriander, and garam masala, stirring for 1 minute until fragrant.
  4. Pour in the canned diced tomatoes and remaining salt. Add the trimmed green beans, bring to a simmer, then cover and cook for 8 minutes until green beans are tender-crisp.
  5. Return the cooked chicken and any accumulated resting juices to the skillet, tossing everything together for 2 minutes to heat through. Garnish with chopped fresh cilantro and serve warm.
