Turkish Roasted Salmon

Oven-roasted wild salmon seasoned with tangy sumac and dried oregano, served over fluffy herbed quinoa alongside a crisp cucumber and tomato salad.

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Combine rinsed quinoa with 1 1/2 cups water and 1/4 teaspoon of the salt in a small saucepan; bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until tender, then fluff with a fork and fold in 1 tablespoon of chopped fresh mint.
  3. Place the wild salmon portions on the prepared baking sheet. Rub evenly with 1/2 tablespoon of the olive oil, ground sumac, dried oregano, 1/4 teaspoon of the salt, and black pepper.
  4. Roast the salmon in the preheated oven for 12 to 14 minutes until it flakes easily with a fork and reaches an internal temperature of 145°F.
  5. In a medium mixing bowl, toss together the diced English cucumbers, diced Roma tomatoes, the remaining 1 tablespoon of chopped fresh mint, remaining 1/2 tablespoon of olive oil, and the remaining 1/4 teaspoon of salt.
  6. Plate each portion of herbed quinoa with a roasted salmon fillet and a generous side of the chilled cucumber-tomato salad.

Notes

Sumac provides a wonderful tart, citrus-like flavor without requiring any added lemon juice.
