- 1 tablespoon olive oil
- 1 pound ground turkey
- 0.5 cup yellow onion (chopped)
- 2 clove garlic (minced)
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 0.5 cup chicken broth
- 8 flour tortillas (small)
- 1 cup canned black beans (rinsed and drained)
- 0.5 cup salsa
- 0.5 cup shredded lettuce
- 0.5 cup shredded cheddar cheese
- 0.5 avocado (diced)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground turkey and 1/2 cup chopped yellow onion. Cook, breaking up the turkey, until browned, about 5-7 minutes.
- Drain any excess grease. Stir in 2 cloves minced garlic, 1 tablespoon chili powder, 1 teaspoon ground cumin, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Cook for 1 minute more until fragrant.
- Pour in 1/2 cup chicken broth and simmer for 2-3 minutes, allowing the flavors to meld and the liquid to reduce slightly.
- Warm the 8 small flour tortillas according to package directions. Serve the turkey mixture in the warmed tortillas, topped with 1 cup canned black beans, 1/2 cup salsa, 1/2 cup shredded lettuce, optional 1/2 cup shredded cheddar cheese, and 1/2 diced avocado.
Notes
Prepare the turkey mixture ahead of time and store it in the fridge for even quicker assembly. Add fresh cilantro for an extra burst of flavor if desired.
