- 1 pound ground turkey
- 1 yellow onion (medium, chopped)
- 3 clove garlic (minced)
- 2 sweet potatoes (medium, peeled and diced into 1/2-inch cubes)
- 1 can kidney beans (15-ounce, rinsed and drained)
- 1 can diced tomatoes (14.5-ounce, undrained)
- 1 can tomato sauce (8-ounce)
- 1 cup vegetable broth
- 2 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 0.5 cup shredded cheddar cheese
- 0.5 cup whole grain corn chips
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add chopped yellow onion to the skillet and sauté for 5 minutes until softened. Stir in minced garlic and cook for 1 minute until fragrant.
- Stir in diced sweet potatoes, kidney beans, diced tomatoes, tomato sauce, vegetable broth, chili powder, ground cumin, smoked paprika, dried oregano, salt, and black pepper. Bring the mixture to a simmer.
- Cover the skillet and bake for 30 minutes, or until sweet potatoes are tender and chili is bubbly.
- Remove from oven and let rest for a few minutes. Serve warm, optionally topped with shredded cheddar cheese and whole grain corn chips.
- Divide remaining chili into airtight containers and refrigerate for future meals.
Notes
This chili is great for making ahead as the flavors develop even more. For extra creaminess, you can stir in a dollop of Greek yogurt or a swirl of dairy-free sour cream before serving, if desired.
