Turkey Stir-Fry

  1. Cook white rice: In a medium saucepan, combine 2 cups uncooked white rice with 4 cups water and 1/2 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until water is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  2. While rice cooks, prepare the stir-fry: In a small bowl, whisk together the low-sodium soy sauce, cornstarch, and 1 tablespoon water. Set aside.
  3. Heat canola oil in a large skillet or wok over medium-high heat. Add ground turkey and cook, breaking it apart, until browned, about 5-7 minutes. Drain any excess fat.
  4. Add broccoli florets, sliced carrot, and sliced yellow onion to the skillet. Stir-fry for 3-5 minutes, until vegetables are tender-crisp.
  5. Stir in grated fresh ginger and minced garlic. Cook for 1 minute until fragrant.
  6. Pour the soy sauce mixture into the skillet and cook, stirring constantly, until the sauce thickens, about 1-2 minutes.
  7. Remove from heat and stir in the sesame oil. Serve immediately over the fluffy white rice. Garnish with thinly sliced green onions, if desired.

Notes

You can add other quick-cooking vegetables like snap peas or mushrooms if you wish.
