Ingredients
- 2 teaspoon vegetable oil
- 0.5 cup onion (chopped)
- 1 clove garlic (finely chopped)
- 4 carrots (chopped)
- 2 celery stalks (chopped)
- 2 potatoes (medium, chopped)
- 14.5 ounce diced tomatoes
- 2 cup water
- 2 cup turkey (cooked, chopped (or chicken))
- 0.5 teaspoon salt (to taste)
- 0.25 teaspoon pepper (to taste)
- 1 teaspoon Italian seasoning (as desired)
Instructions
- Heat vegetable oil in medium saucepan.
- Add onion, garlic, carrots, and celery to the saucepan and stir for 2 minutes.
- Add potatoes, diced tomatoes, and water to the pan.
- Bring the stew to a boil, then lower heat and simmer for 30 minutes or until vegetables are tender.
- Add turkey and cook for another 5 minutes or until heated through.
- Season the stew with salt, pepper, and Italian seasoning to taste before serving.
