- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 yellow onion (medium, diced)
- 8 ounce mushrooms (sliced)
- 2 clove garlic (minced)
- 1 teaspoon dried oregano
- 0.5 teaspoon dried thyme
- 0.5 cup chicken broth
- 2 cup fresh spinach
- 0.5 teaspoon salt (divided)
- 0.25 teaspoon black pepper
- 1 package instant mashed potatoes (4 servings)
- 0.25 cup fresh parsley (chopped)
Instructions
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
- Add the diced yellow onion and sliced mushrooms to the skillet. Cook, stirring occasionally, until the onion softens and the mushrooms release their liquid, about 5 minutes.
- Stir in the minced garlic, dried oregano, and dried thyme. Cook for 1 minute more until fragrant.
- Pour in 1/2 cup of chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
- Add the fresh spinach and cook until wilted, about 2-3 minutes. Season the turkey mixture with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
- Prepare the instant mashed potatoes according to package directions, seasoning with the remaining 1/4 teaspoon of salt.
- Serve the comforting turkey skillet over the prepared mashed potatoes. Garnish with chopped fresh parsley, if desired.

Leftovers store well in the refrigerator for up to 3 days. You can also add other quick-cooking vegetables like frozen peas or corn to the skillet.
