  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned, about 5-7 minutes. Drain any excess fat.
  2. Add the diced yellow onion and sliced mushrooms to the skillet. Cook, stirring occasionally, until the onion softens and the mushrooms release their liquid, about 5 minutes.
  3. Stir in the minced garlic, dried oregano, and dried thyme. Cook for 1 minute more until fragrant.
  4. Pour in 1/2 cup of chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer.
  5. Add the fresh spinach and cook until wilted, about 2-3 minutes. Season the turkey mixture with 1/4 teaspoon of salt and 1/4 teaspoon of black pepper.
  6. Prepare the instant mashed potatoes according to package directions, seasoning with the remaining 1/4 teaspoon of salt.
  7. Serve the comforting turkey skillet over the prepared mashed potatoes. Garnish with chopped fresh parsley, if desired.

Notes

Leftovers store well in the refrigerator for up to 3 days. You can also add other quick-cooking vegetables like frozen peas or corn to the skillet.
