Turkey-Poblano Chili

Rich and smoky ground turkey chili simmered with poblano peppers, black beans, and warm spices, served with steamed white rice.

Instructions

  1. In a saucepan, bring 4 cups of water and 1/2 tsp of salt to a boil. Add white rice, cover, reduce heat to low, and cook for 15 minutes until tender.
  2. Heat canola oil in a large pot over medium-high heat. Add poblano pepper and chopped scallions, sautéing for 3 minutes until softened.
  3. Add ground turkey to the pot and cook for 6 minutes, breaking it apart until browned through.
  4. Stir in ground cumin, chili powder, remaining 1/2 tsp salt, crushed tomatoes, and black beans. Bring to a simmer and cook for 5 minutes.
  5. Ladle chili over warm white rice and sprinkle with shredded cheddar cheese before serving.

Notes

Store leftover chili and rice in separate airtight containers for up to 4 days.
