Turkey Picadillo Skillet with Black Beans

  1. Heat 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the diced yellow onion and red bell pepper; sauté for 3 minutes until softened.
  2. Add 1 pound ground turkey and 3 minced garlic cloves to the skillet. Season with 1/2 teaspoon of the salt and 1/4 teaspoon black pepper. Cook, breaking up the meat with a wooden spoon, for 5 to 6 minutes until browned and cooked through to an internal temperature of 165°F.
  3. Stir in 2 diced Roma tomatoes, 1 can drained black beans, 1 teaspoon ground cumin, 1 teaspoon smoked paprika, 1/2 teaspoon dried oregano, and the remaining 1/2 teaspoon salt. Reduce heat to medium-low and simmer for 4 minutes until the tomatoes soften and flavors blend.
  4. Remove skillet from heat and stir in 2 tablespoons lime juice and 1/4 cup chopped fresh cilantro.
  5. Heat the 2 packages of microwave brown rice according to package directions (about 90 seconds per pouch). Divide rice among four bowls and top with the warm turkey picadillo.

Notes

Keeps well in airtight containers in the refrigerator for up to 4 days. Reheat individual portions in the microwave for 90 seconds.
