Ingredients
- 1.5 pound ground turkey (lean)
- 8 ounce penne pasta (uncooked)
- 1 can crushed tomatoes
- 1.5 cup mozzarella cheese (shredded)
- 1 yellow onion (large, diced)
- 1 cup vegetable broth
- 1 tablespoon vegetable oil
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 teaspoon salt
Instructions
- Preheat oven to 375°F. Cook penne pasta in boiling water for 8 minutes until al dente, then drain.
- Heat vegetable oil in a large skillet over medium-high heat. Add ground turkey and yellow onion; cook 7 minutes until turkey is browned.
- Add crushed tomatoes, vegetable broth, dried basil, dried oregano, and salt to the skillet. Simmer for 5 minutes.
- Combine drained penne pasta and turkey tomato sauce in a 9x13-inch baking dish.
- Top evenly with shredded mozzarella cheese and bake uncovered for 15 minutes until cheese is melted and bubbling.
Notes
Allow to sit for 5 minutes after baking for easy slicing and serving.
