Ingredients
- 6 low-carb tortillas (large)
- 1 pound deli turkey pastrami (thinly sliced)
- 6 ounce Swiss cheese (sliced)
- 6 ounce cream cheese (softened)
- 2 tablespoon Dijon mustard
- 2 cup baby spinach
- 0.25 cup dill pickle relish
Instructions
- In a small bowl, stir together the softened cream cheese, Dijon mustard, and dill pickle relish until smooth and spreadable.
- Lay the low-carb tortillas flat on a clean surface. Spread 2 tablespoons of the seasoned cream cheese mixture evenly over the surface of each tortilla, leaving a 1/2-inch border around the edge.
- Layer each tortilla evenly with sliced deli turkey pastrami, Swiss cheese, and a light layer of baby spinach.
- Roll each tortilla tightly into a log. Using a serrated knife, slice each roll crosswise into 5 to 6 pinwheels. Pack into lunch containers.
Notes
Pinwheels hold their shape exceptionally well when chilled overnight. Wrap tightly in plastic wrap before slicing for clean edges.
