- 1 tablespoon olive oil
- 1 pound ground turkey (lean)
- 1 yellow onion (medium, chopped)
- 2 clove garlic (minced)
- 1 can crushed tomatoes (15-ounce)
- 1 teaspoon dried oregano
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 cup frozen peas (thawed)
- 8 ounce spaghetti
Instructions
- Bring a large pot of salted water to a boil. Add spaghetti or penne pasta and cook according to package directions until al dente. Drain, reserving 1/2 cup of pasta water, and set aside.
- While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add lean ground turkey and chopped yellow onion. Cook, breaking up the turkey with a spoon, until browned and onion is softened, about 6-8 minutes. Drain any excess fat.
- Stir in minced garlic and dried oregano. Cook for 1 minute until fragrant.
- Add crushed tomatoes, 1/2 cup reserved pasta water, salt, and black pepper. Bring to a simmer, then reduce heat to medium-low and cook for 5 minutes, allowing flavors to meld.
- Stir in the thawed frozen peas and cooked pasta. Toss to combine, ensuring pasta is coated in sauce. Cook for 1-2 minutes until peas are heated through.
- Serve immediately.
Notes
A sprinkle of Parmesan cheese would be a delicious addition to this dish.
