  1. In a medium bowl, combine 4 ounces ground turkey, 1/4 cup finely chopped mushrooms, 0.25 grated or minced yellow onion, 1/4 teaspoon garlic powder, 1/8 teaspoon salt, and 1/8 teaspoon black pepper. Mix gently until just combined. Form into one patty.
  2. Place the cubed potato in a small saucepan and cover with water. Bring to a boil and cook for 10-15 minutes, or until fork-tender. Drain well. Return potato to the hot pan, add 1 tablespoon milk and 1/2 tablespoon butter, and mash until smooth. Season with salt and pepper to taste.
  3. While potato cooks, heat 1 teaspoon olive oil in a small skillet over medium heat. Add the turkey-mushroom patty and cook for 5-7 minutes per side, or until cooked through and golden brown. Ensure internal temperature reaches 165°F (74°C).
  4. In a separate small pot or microwave-safe bowl, steam 1/2 cup sliced carrots until tender, about 5-7 minutes.
  5. Serve the turkey-mushroom patty with the mashed potatoes and steamed carrots.

Notes

You can use a potato masher or a fork to mash the cooked potato. For quicker mashed potatoes, use instant mashed potatoes according to package directions.
