Ingredients
- 1 tablespoon olive oil
- 1 yellow onion (medium, finely diced)
- 3 clove garlic (minced)
- 2 pound ground turkey (93% lean)
- 1 egg (large)
- 0.25 cup almond milk (unsweetened)
- 0.25 cup fresh parsley (chopped)
- 1 teaspoon Italian seasoning (dried)
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1.5 cup marinara sauce (compliant unsweetened)
- 4 sweet potatoes (medium, peeled and cut into 2-inch chunks)
- 0.25 cup full-fat coconut milk (full-fat)
- 2 tablespoon ghee
- 1.5 pound broccoli florets (fresh)
Instructions
- Preheat oven to 350°F. Line a baking sheet with parchment paper.
- Heat the olive oil in a small skillet over medium heat. Add the finely diced yellow onion and cook for 5-7 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant. Let cool slightly.
- In a large bowl, combine the ground turkey, egg, almond milk, chopped fresh parsley, dried Italian seasoning, 1 teaspoon of salt, 1/2 teaspoon of black pepper, and the cooled onion-garlic mixture. Mix gently but thoroughly until just combined. Do not overmix.
- Form the mixture into a loaf shape and place it on the prepared baking sheet. Pour 1/2 cup of the compliant unsweetened marinara sauce over the top of the meatloaf.
- Bake for 50 minutes. While the meatloaf bakes, place the sweet potato chunks in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until fork-tender.
- Drain the sweet potatoes and return them to the hot pot. Add the compliant full-fat coconut milk, ghee or compliant butter alternative, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Mash until creamy and smooth.
- After 50 minutes, remove the meatloaf from the oven. Pour the remaining 1 cup of compliant unsweetened marinara sauce over the meatloaf. Return to the oven and bake for another 20-25 minutes, or until the internal temperature reaches 165°F.
- During the final 10 minutes of meatloaf cooking, steam the fresh broccoli florets until tender-crisp. You can steam them in a microwave-safe bowl with a splash of water and covered, or in a steamer basket over boiling water.
- Let the meatloaf rest for 10 minutes before slicing. Serve with mashed sweet potatoes and steamed broccoli.
