  1. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Drain any excess fat.
  2. Add the chopped yellow onion, minced garlic, and grated fresh ginger to the skillet. Cook for 2-3 minutes until fragrant and the onion has softened.
  3. Stir in the soy sauce, rice vinegar, brown sugar, and sesame oil. Mix well to coat the turkey.
  4. Add the finely chopped water chestnuts and shredded carrots to the skillet. Cook for another 1-2 minutes until heated through and crisp-tender.
  5. Remove from heat. Serve the turkey mixture immediately in the separated lettuce leaves. Garnish with chopped green onions and fresh cilantro, if desired.

Notes

You can use ground chicken or pork instead of turkey. Pre-shredded carrots and bottled minced ginger/garlic can save additional prep time.
