Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 2 garlic cloves (minced)
- 1 tablespoon fresh ginger (grated)
- 0.25 cup soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon brown sugar
- 0.5 cup water
- 1 head butter lettuce (separated into leaves)
- 1 cup shredded carrots (shredded)
- 2 scallions (chopped)
Instructions
- Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add 1 pound ground turkey and cook, breaking it apart, until no longer pink, about 7-8 minutes. Drain any excess fat.
- Add 2 minced garlic cloves and 1 tablespoon grated fresh ginger to the skillet. Cook for 1 minute until fragrant.
- In a small bowl, whisk together 1/4 cup soy sauce, 1 tablespoon rice vinegar, 1 teaspoon brown sugar, and 1/2 cup water. Pour the sauce over the turkey in the skillet. Simmer for 3-5 minutes, allowing the sauce to thicken slightly and coat the turkey.
- Separate the butter lettuce head into individual leaves. Arrange the lettuce cups and 1 cup shredded carrots on a platter.
- Spoon the turkey mixture into the lettuce cups, top with chopped scallions if desired, and serve immediately.
Notes
You can add a dash of sriracha or a pinch of red pepper flakes to the sauce for extra spice.
