Ingredients
- 4 ounce ground turkey (lean)
- 1 teaspoon olive oil
- 1 clove garlic (minced)
- 1 tablespoon soy sauce
- 0.5 tablespoon rice vinegar
- 0.5 teaspoon ginger powder
- 0.25 teaspoon red pepper flakes
- 3 butter lettuces (separated)
- 1 tablespoon creamy peanut butter
- 1 tablespoon water
- 1 teaspoon soy sauce
- 0.5 teaspoon lime juice
Instructions
- For the filling: Heat olive oil in a small non-stick skillet over medium heat. Add minced garlic and cook for 30 seconds until fragrant. Add ground turkey and cook, breaking it up with a spoon, until no longer pink, about 5-7 minutes. Drain any excess fat.
- Stir in 1 tablespoon soy sauce, rice vinegar, ginger powder, and optional red pepper flakes. Cook for another 2-3 minutes, allowing the sauce to coat the turkey. Remove from heat.
- For the peanut sauce: In a small bowl, whisk together creamy peanut butter, 1 tablespoon water, 1 teaspoon soy sauce, and lime juice until smooth. If it's too thick, add a tiny bit more water, 1/2 teaspoon at a time.
- Arrange the butter lettuce leaves on a plate. Spoon the turkey filling into each lettuce cup. Drizzle with the peanut sauce or serve the sauce on the side for dipping.
Notes
To make these even speedier, use pre-minced garlic and ginger. The peanut sauce can be made in advance and stored in the fridge.
